I think it requires a bit more than just altering the bolt face. There would be a bit of tricky work to do on the mag well and the feeding, specially on the sako.
You are best to start with the right gun from the start I think.
The old BSA hunter in 222 could be a good candidate as well. I have converted one from 22 hornet to 7,62x39 and the feeding from the mag was really the difficult part.
Apparently the new mini howa is going to come with 7.62x39 barrels , that would be another candidate.
Yeah the grendel would be a sweet round for that little action
