My old grandfather told me of a trick. Thread a hair form a horses main or tail through a raisin. Feed them some plan raisins then toss them the one with the hair. Once they swallow it they are so distracted by the hair in their throat you can grab them. Don't know if it works but give it a go & let us know.
Now with geese it's pork fat on a string. One swallows it & it comes out the other end pretty quick, then you have a gooses on a string, more than one if another then eats it. Sounds like bullshit that one.

Try catching them just like you do ducks - dig a longish narrow channel in your garden, just about chicken height deep, and wide enough for a chicken [or duck] to walk in. Lay a trail of grain across your lawn and down in to the channel, chickens [or ducks] follow it and then cant go backwards, cant fly out cos its only just wide enough, and sometimes you get a whole trench full of the li'l shits and you just walk up behind, pull them out, knock em on the head and pluck em..........easy peasy.
Or soak a heap of grain in whisky etc, then feed it out. They get drunk as skunks and are easy pickings.
Finally! Angus back in 1958 I invented and patented the stick. There are plenty of them around if you look for them so grab a stick in your right hand and some wheat in your left. Spread wheat on the ground, wait patiently and when they turn up pound the chickens with a strong downward blow. That'll be dollar fifty three thanks (note that I have kept the price of sticks the same for the last fifty years). It hasn't been the business success I expected it to be.
Go to the library, get out 'Danny the champion of the World' by Roald Dahl. Should give you a few ideas.

Oh you guys.... back in the good old days we just found out which tree they were roosting at night and climbed up lit them up with a torch and bashed them over the noggin with a short bit of 4 x 2 ( I suppose you could use bamboo a la Ricky Chen)
obviously if they are roosting in your neighbors trees might pay to ask them first
