I didn't know they were huntable here either until last year. Apparently they are very tricky to stalk.
They move fast and will go to cover can flush them with a dog and shot gun them. Either spotlight them when there roosted or use a 223 during the day. They're noisy grass thieves that leave mini cowpats everywhere.
