I'm not talking about nanny's you young male goats, but old stinkies. I have never harvested meat of >1yo billies due to the stink.

Make salamis out of stinking stags so I don't see why not
Billies stink cos they piss over themselves. Their meat will be stronger than that of a younger animal but still should be good in salami.

Therefore it's likely that "Stink In" will equal "Stink Out".

Billies only stink certian times of the year when the nannys are in season because they piss on them selfs the really big old ones are for dog food but bit younger billies are fine for mince and salamis sausages shot heaps that have being turned into that fine to eat
My Fijian Indian friends always want the biggest smelliest billies for their curries, and let me tell you those curries are good, damn good... Look after the meat and it should be fine, yes flavour will be stronger, but hey flavour it up with herbs and spices, mix in other meat...can't be all bad...
