    Confession time

    I don’t really like venison.

    There I said it.

    I have been stewing over this for years. I WANT to like it, I just…don’t.

    I have tried it many different ways, many different times. I do enjoy it occasionally, just in small amounts. Yesterday I finally admitted it to myself. My good mate smoked a blackstrap from my recent red hind. He did it to perfection, it was amazing. I had a piece to try it, then a piece with the meal (lots of smoked brisket and beef cheek tacos) and that’s all I wanted. I just didn’t want anymore.
    I’m not sure if it’s the rich flavour? I haven’t had much other game meat, so maybe that’s all it is?

    I love beef and lamb, and could eat large steaks of both, but am done with a small piece of venison.

    Maybe I need to find someone with ready access to the above and trade venison for them. I tend to give most of my hard earned venison away to friends and family. I am certainly not going to stop hunting. Since I discovered it 10 years ago it has become a part of my identity as a man. If I can’t find someone to trade with I’ll just have to continue to give it away I guess, saving the occasional steak for myself.

    Mate you are not the only one , i was forced to eat meat as a kid. I have a taste and texture issue....in saying that i love tube steaks, and most of all fallow or sika....cant stand the gamey flav of red.

    Likewise. Red deer is not a target species, just because I'm not a fan of the taste. Fallow deer however is very palatable.

    I'm not a big fan of it either. I used to eat a lot of it and would prefer it over beef. Now not so much. I always have plenty of beef and lamb in the freezer so maybe there's too many options. We more use the venison these days for stews and stir fry's or just give it away. I'm definitely finding I'm carrying less of it out of the hills these days which my knees don't seem to mind.

    next time dont smoke it I cant stand smoked meat or smoked fish especially marlin

    My wife won't eat reds but will eat fallow.
    I do much prefer fallow over most othe game meats.
    May be seen as sacrilege by some but I turn nearly 100% of my fallow into small goods, mince or cube it for stews and curry.
    Very rarely into steaks.
    I'd sooner have beef for steaks.

    Nah just kidding guys.
    Each to their own.
    I actually prefer red to anything else (except Wapiti and moose. Although moose might only be because I haven't eaten enough for the novelty to wear off)
    I am very picky about what I eat though. Up to two year old hind or same but summer stag (you can keep roar ones) and I just like a nice steak fried in butter with salt added.
    I hate any other added flavours.

    Always plenty of people to give it to, especially when things are expensive and there isn't much cash around. Trading is always easy too, it doesn't have to be traded for other meat either.
    I remain very partial to the game meats, but must admit that when I go to a BBQ and someone serves beef or lamb, I do enjoy the difference.

    I think part of the problem is that in general terms our palates have become accustom to the bland flavors of supermarket/ processed protein.

    Most people can no longer cope with milk that's straight from a house cow, bacon that has been sourced from a pig that hasn't lived on concrete and fed milk and cured the old way.

    I doubt if many would like roast chicken from someone's backyard hen house.

    I know several non rural people who can't even cope with the smell of a roast mutton cooking.

    Venison definitely needs to be looked after from the moment it is harvested until it is served, however many may now need to reacquire a taste for game to enjoy it.

    As I have got older (we do) my palate has moved from preferring fallow steak to preferring a good thick red steak.

    my favourite is fallow steak egg and bread crumbed but a good meatball with a sauce and pasta takes some beating

    Ever had veni turned into small goods? We eat a shitload of veni as sausages and mince. I love a good veni steak aswell but having small goods gives a little more variety.

    I had a good supuly of red/wapity cross from a mates ex deer farm. I was allowed to drop one whenever my freezer was low. Been farm raised it wasn't gamy but I just didn't enjoy it as much as beef. I always trimmed any excess fat off the beef but still found the beef more enjoyable. When I shot the dominant stag to change up the bloodlines a bit I decided to get him turned into salami, burgers & sausages. It wasn't cheap as we ended up with over 100kg of meat from him but it was sensational.
    I'll still enjoy game meat but apart from a small steak now & then small goods rule.
