In the US when they are doing research on illnesses such as Chronic Wasting Disease this is where they usually inspect and remove for sampling if suspect.

You are correct that heads are used for CWD but CWD is a Prion disease that effects the brain / CNS so it makes sense to check those glands for CWD. I always check the windpipe, lungs, liver, intestines as well as lymph
