Does it have meat on the bones?

Seriously tho, don't despise the shoulders. If they are not all shot up they are amazing slow cooked. Shot placement for meat retention is advised.

Hunted a Billy the other day, not a huge one but had decent horns, balls and a goatee, did the smell test immediately after shooting and wasn't that strong, fried up a test piece of back meat and it tasted as lamby as ever. Made a beautiful curry.
Just do the smell test each time don't automatically be put off billies as a rule.

Just tried something new for me after watching an American hunting show. Diced the meat from a goat leg, removing nearly every last bit of fat, gland, silver skin and other connective tissue. It's low yield meat processing, but the final product is good enough for relatively hot and fast cooking.
