Best thing would be to put your boots on, and go have a look for yourself like the rest of us have.
Doc website will show you where you can and cannot hunt.

Spent a lot of time in that part of the country from Dunedin to Haast shooting hundreds of deer with a 223 in my teens and early 20’s.
The best Knowlage is time in the hills doing the hard yards.

Blue mountains
Waikaia
Remakables
Old man range
Eyre mountains
Livingstone range
Mary’s range

Search the DoC website. It has everything you need to know there to make a start. Otago has heaps of public land blocks to hunt which most are easily accessed.
