Depends on the altitude you hunt. Down here in Canterbury and time from Labour weekend on is good up on the tops. Lower down is a bit earlier. North facing scree slopes start the soonest.
Where are you? Spring is earlier in Nthland, and never in Southland. In between varies. Be specific about where you are and the area you want to hunt.
Probably depends on how far south you are and also altitude you are looking to hunt, also what animal you are hoping to target.
For me hunting red deer in southland late november and december. Let them put a bit of condition on before you go hunting. November a good time to get into freshly kicked out yearlings. fallow in the Blue mountains...whenever I can get a block but November is good all month.
I try and book a trip in just before Xmas, so week of the 20th, no beggar around as they all too busy with Xmas pissups or getting ready for Xmas, good way of filling the freezer for the BBQ season!
may well be different up north if thats where you located
My 2cents
cheers

For deer?
There's always plenty of grass on the coast.
But anytime early October onwards, weather would hopefully be a bit more settled, and temps a bit warmer.
I'm drawn to the mountains and the bush, it's where life is clear, where the world makes the most sense.
and yes for deer cheers for that mate
