There's a really crack up vid on YouTube that is something like "gutting a deer kiwi-style". It's actually doing everything pretty much the way I have always seen it but the host just has something funny about him.

their is lots of variations on how to do it. I usually arshole and cut esophagus first.Open belly cavitypull arse threw and intestines out,roll paunch out of way and cut round diaphram,reach up past lungs and grab esophagus and pull threw into cavity then the whole lot comes out as one.(little risk of popping anything:sick:)
Be carefull reaching up round the heart/ lungs if you shot it in the engine room, broken ribs will slice your knuckels up!
Practice on goats, they are easy to come by and pretty much the same on a smaller scale.
Get Hold of a framer and watch him do a sheep its basicly the same thats how i lernt
Cut throat tie food chord in a knot, do the hocks, cut out ass hole (unless carrying) rip all the insides out.
Handy hint leave ass hole in if carrying stops bllod running down ya crack
I've got a knife with a seperate gut hook ... I use the gut hook for skinning
I can imagine a gut hook on the blunt edge of your knife could be a pain

Basically what Veitnamcam said is the standard way.
Remove head-cut windpipe below esophagus-cut around arse (round the inside of the pelvic cannel)-open the belly skin-tip deer on side and let guts fall out (will have to cut a few bits and pieces like fat around kindeys etc)
then cut diaphram and pull.
I don't.
Take back legs, back steak and front legs off without having to gut it. I do usually hunt the tops and have a pack to carry all the meat though.
How do you get eye fillets with out gutting it?
Unfortunately it's one of those things where having someone show you one and then watch and guide you as you do the first one makes life very much easier. It's definitely a learn-by-doing type thing. Try going along on a meat-hunt or pay for a guided meat hunt once, easiest way to learn all these details.
Geez, I dont mind wasting goats but I dont get deer often enough to be fussy. I either carry it out or bone it out. There is alot of meat if you bone it out good.
Agree with having to be there as someone else does it. Seen a fair few amount of videos online, but had a mate show me in person how its done. Heaps easier, but still find the hardest part getting the deer on the deck! Haha
I don't worry about them. They are only a mouthful and are almost always covered in shit and blood.
Back steaks out, bone the HQs making sure the rump is attached, and shoulders (unless they are shot up). Stuff it all into my day pack. Boot the rest over a bank.

Different story if you are near a quad, then I gut them and biff them onto the transport. Never seems to happen though.
But otherwise, you will soon get sick of carting whole deer around. The only reason I used to do it was because I was staggering towards a chiller and dollar signs.

Eye fillets - what bit do they come from?
Dougie, Toby is referring to a small muscle group that is located at the rear of the underside of the spine. It is accessed through the stomach cavity. Very tender cut.
From a cattle beast they are the cut called "fillet steak". And "porterhouse steak" from a cattle beast is the "back steak" from a deer (the strip on the outside either side of the spine, running from the hip through to under the shoulder blade). You can see where the back steak comes from in the second to top pic of mine (above).

Just hack it to bits and name them your them yourself :D
