Food safety rules kinda killed it, but its on the way back. MPI has a system where if you pass a food safety test, you can supply butchers. I don't know costs, but I know a guy who does it in the middle of the North Island.
You have to find the butcher yourself though.
No food safety rules back then, the sign lays it all out, but there was never any way of checking where carcasses really came from
