Just a few quick idea's off the top from our family tramping holidays
Take a chux multicloth as a towel - lightweight easy to rinse out
We would package our meals into daily requirements
No cans or packaging - as keeping weight down is important
Breakfast - porridge / cut up and add dates for variety
Lunches - Hard cheese, salami & cabin bread - cup of soup

Of late on day hunts I have enjoyed a can of corned beef on crackers / thermos of soup also goes down well.
Tea - Rice / pasta based meals - prepacked sachet meals ex supermarket
    Tea bags / milk powder
    Powerade
