Hello - Over the years I've commissioned a few customs of the blued steel and walnut variety, never spending quite as much as you propose though (in one go).
Things to think about with the benefit of hindsight . . . .
Its your project, consult others, seek ideas but don't be a follower or compromise, it nearly always leads to disappointment - set you own objectives for the project and stick with them. I've been impressed with a couple of the recent build stories guys have posted up here where they have produced a really well thought through result.
Don't be swayed or lead by current fashions or fads, nothing wrong with some of the new stuff (or old for that matter either) but a lot of what the firearms industry produces (both product and ideas) is designed to get people to spend money on the latest stuff, which is seldom much improvement on whats been done before.
Be unique.
Build a flintlock rifle with gold inlays and a hand carved, walnut stock.
Then spend the rest of your budget on lead balls (you'll need plenty of practise if you're going to hit anything at 600m).

Personally i would go bigger then 7 saum. Sure you can shoot to 600y on a 708 but when that once in a lifetime stag is there and the weather isnt perfect you want a thumper.

@199p your right with the (go big) to me I have a 300norma parts from @@camo wsm and although not a once in a lifetime bull was my biggest to date. I wouldn’t of been happy shooting it anything else. Dreamer this was the bull over the other catchment.
