    I think we are spoiled for choice re gun smiths and component manufactures.
    I have dealt with Barnard, True-flite, Nathan Foster.

    You may need to nail down your requirements, weight, range, how many shots at the range etc as barrel life on the big 7mm's will be limited. (new barrels are not expensive). Moderator vs muzzle break for the larger ones..
    Then give a few guys a phone call.

    Caliber options are huge. I would think 7mm is enough for most NZ game.
    7m08, 7x57, 7x61s&h, 7x64, 7mm rem mag, 300win, 308 & 358 norma, 338lapua but we are getting into over kill exotics.
    Have not listed all the modern 7mm rounds

    I would also suggest nailing down in writing the build specification, final cost inclusive of GST, delivery date and guaranteed performance for your $.
