I recently sold a AR15 and have all the ammo I had loaded for it (about 600-700 rounds) the ammo won't fit (bolt won't fully close) in my other AR, can I resize it without pulling them all apart?

Depending on your die set it is easy peasy.
Remove decapping assembly, lube and go for it.
Failing that get a body die.
I need a small base die for my AR but have sized loaded ammo with it.

So what will be stopping it chambering? The size of the base or the length to the shoulder?
Or your projectile is too long and bolt wont close, colour the projectile with a permanent marker and try chambering it, gently.
ditto round the back end of the cartridge. kill 2 birds with one stone
Carefully remove the round and look for marks on where you have coloured

Although it's an AR, so not likely that rounds that fit the Mag will be getting jammed into the rifling.

Yeah, pretty sure it's not the projectiles, I will try pen around the base when I get home.
Hornady 55gn SPs if loaded to fit the mag are into the rifling on my Lothar Walther barreled Schmeisser .223 AR, which has a very tight chamber.
So us fancy pants barreled boys are special.
My 5.56 Colt barreled Frankenstein has a throat so long there is no chance of getting anywhere near the rifling.

My 5.56 chamber will feed longer rounds than my .223 Wylde. Probably pay to check with a hornady gauge.Mags internal lengths are all different as well. My stag arms alloy is quite a bit longer internal dimensions than say a P mag. Is bolt being released into battery as designed or closed gently?
As Mikee pointed out it might just need the bullet seated in a fraction, be worth a try
Well it's got me buggered, definitely not a projectile seating issue, I have now run some of the loaded rounds through a small base sizer without the decapping stem and the bolt still won't go into battery, I have used vivid to try and see where they are tight with no obvious results, factory hornady ammo fits fine. I have measured case length and outside neck size.... They should bloody fit!
I've put them all at the back of the cupboard out of sight!

Take the upper off and drop a round into the chamber. It should fall in without any resistance. If it doesn't resize some new brass and try again. This eliminates problems caused by the bolt not going into battery properly.
Have you cleaned the chamber and bolt lugs recently?
