Although I don't fully agree with Jeff cooper's scout rifle concept, I do agree with his choice of calibre .308 and wouldn't say no to a styer scout.
Having been raised on a diet of Phillip Holden books how can one go past a Sako .243?
What about 22?
Phillip Holden did a few hunts with the outfit I guided for (good bloke I liked him) & I also read all his books at school & after, but he only used a .243Win because he hated recoil & couldn't take a lot of shots with more, we did up grade him to a 25/06 later !
I think the 30/06 is the do it all if a reloader & 308Win if not, I'd pick 30/06 -.223 if I had to pick two, if allowed 3 add 12ga if 4 add .22LR !
And fishing rods.
With about to be three licence holders under this one roof we can cover all the bases pretty much but I'm still a fan of my two big bore artillery pieces.

Why make do with an adjustable spanner when you have the option of a socket set. I for one would like a full 500 piece tool set !

7 rem mag. Loaded down for regular use and full load for mountain.

Too answer the 2 gun question. For me the first choice is easy .223 rem. Age and a certain level of decrepitude has resulted in hunting, for me, to be limited to the flatter stuff and not too much of that. The .223 will do everything I need well enough. The second choice is far more difficult. Do I go for my scoped .303? One of the .308's? 6.5 x 55 T3? Damned if I know really. Hopefully I never have to make the choice.

270 Win - 110 ttsx and 150 partitions. 2nd shooter would have to be a shottie, small game and ducks. That would cover most situations for me.
I've gone through a variety of calibres over the years. Finally settled on the 280AI as my do everything cal and a light 308 Kimber as a handy go to for 500y or less. For the reloader especially there is always delight (and some heartache) in getting a new to you calibre and getting it to perform well.

Well if you can afford one you can afford to employ a bearer I guess, although for the price I would expect one to be included.
If they really did manage to pass a 2 gun limit in the future I guess the wife would have to get her licence and own a couple of rifles too...
If I had to choose just 2 I guess i'd still need a 22LR for rabbits / possums at night, and I'm happy with my 6.5cm or maybe if it was the only center fire I could have a 6.5PRC.

A .22lr would be a no brainer for me. There’s a lot of bang for your buck to be had with the humble 22: small game hunting, target shooting, trying to stretch the range with subsonics; good times...
The other choice would be a mid range 6.5mm: 260, Creedmoor, 6.5x47, 6.5x55. All much of a muchness. Low recoil, easy on barrels, great ballistics; job done. Good allrounders for general big game hunting, ringing gongs, and even a bit of casual varminting. If I had to choose one it would probably be the Creedmoor, simply because I’m not a reloader. As a 308 owner it actually hurt to type that :D
Shotguns? A must for game bird hunters but I have minimal need for one. Rifles all the way
