Id start of by just removing material in the barrel channel and leave the bedding till after testing.
I did exactly this on a sako for one off Buzzmans mates just recently. Removed enough material to leave a 1mm clearance between barrel and stock. Removed high spots in the action area that should not be touching and the fella sent me a photo of an grouping that I'd be happy to hang on my wall.
