Others may do it differently, I do it this way
Find an ammo that your rifle likes to eat without jamming (CCI for my Ruger)
Sight in at, say, 50m. Get your windage sorted and zero at that height.
Shoot at 10 m intervals beyond that (and 40m too if you think it might go high) and record the drop at those distances.
Now you've got a drop chart for that ammo in that rifle so if you are aiming at a bunny at 120m you know to aim, for example, 30mm high to scone it in the noggin.
if your local range won't accommodate then you can zero at 50 there then measure out distances that suit somewhere else?
