I want to know once zeroed at 100M how much dial do you have left.

The Swarovski info says 14 mil of elevation so if its centred then half of that - 7mil available. That should be enough to get to maybe 800 with a 6.5 or maybe 900 with a 300 Mag.
Check to see where your elevation dial is currently at
Dial one way and record
Dial the other way and record
Then dial back to your current zero setting
See if your currently in the middle or closer to the “ top” setting
Might need to shim your rear scope ring 10 thou

Yip done all that I have of the 140 clicks I'm 35 from top and 114 from the bottom.
I can't see why a high end scope mounted in a very standard set should use so much of the elevation just to zero it.
So I have re centered the reticle and will resight it in just to re check.

What mounts are you using and have you had another scope on the rifle? Coke can is your friend...

Yeah it's just seems crazy that a scope worth 6k you don't get a full turn of elevation when mounted in a pretty standard set up.

Im thinking it probably aint the scopes fault, more a mounts fault. Try another scope in the same mounts to give you a reference. And then if it is a base/mounts problem, then change the mounts. The Burris rings with the inserts are great for sorting this out.
The Optilocks have the same insert type system right? Which means you should be able to change the inserts to correct the problem. Or can you get the adjustable inserts like the Burris, or do the Burris ones fit the Optilocks? Cos that would sort your problem.

I have the same issues with a new z5 on a t3 in tikka one piece rings. Can only get to 450 meters. The burris inserts maybe worth a try but can't find anything to say they fit into a Sako/Tikka ring. Outside profile of the ring.
Hard to mill one piece rings...
What rings are you using I've never had an issue with the z5 on a Tikka using Talley low rings
