I thought I got all my rifles threaded 14x1, but on checking I have one that looks like 14x1 but it isn't???
It starts to screw onto a 14x1 thread cap but will only loosely go two turns.
Any idea what the likely thread would be?

I'm going to ask the painfully obvious here. What thread did you ask for?
14x1, but it isn't. And too long ago to remember.
Ways to figure it out??
Thread pitch gauge and verniers will sort out what it is. Unless whoever cut the thread had a slight mishap when machining that one and it's not the right diameter, slightly wrong pitch or not quite deep enough.
It may have been matched to an oversize thread on a suppressor or brake.
