    Nice work!

What is the condition of the animals like versus the domesticated farm stock? Do they carry less fat or is it distributed differently? Does the taste vary compared to farmed ones (diet must have an effect)?

Less fat content, a better taste. You are right different tucker makes different taste however there is still a fair bit of grass in the clearings and they are gobbling it up flat out.
The condition of the animals are very good, these were very young but still plump. I have eaten a lot of wild ones and they have all been lovely eating.

Make sure you shoot the young lambs not the old ewes, the older ones can be full of lice and generally poor quality, daggy etc
