years ago when I got the odd Canadian we only did the breast. I asked the question about the legs and was told they could be a bit stringy and not worth the hassle.
I subsequently never tried them but could definitely say they would work in a crock pot.
Hope you mean geese, and not "Canadians" in a Jeffrey Dharma kind of way.
