I got shown by a new hunting buddy recently who has combined a few techniques into one. Basically, peal the skin of the legs and stomach on one side, drape it on the ground. Do the inside of that same side. Take legs off that side and drop them in bags. Roll the animal over, do the other side then backstraps are done when you just peal that whole lot of skin off. It's so quick when you get practised. The guy who showed me does 4 legs and backstraps with zero hair in approx 10 mins... and that was while explaining the process to me.
I'm sure there's other techniques out there but this has been the easiest one I've found. Also keeping a hoof locked between your legs at all times to move the animal around and just in case it kicks (not that I've had that happen but I've heard some people have).
