Thread: Wallaby

Not wanting to hijack that's thread but mention has been made of waste. On the last trip I decided to try biltong, and took all the fixings much to the amusement and ridicule from my fellow traveller. Removing the back legs from a handily close donor animal I set to it one afternoon. In the photo of it drying the socks were added by my companion for comic effect although he said they will probably taste better. Two days of sun and a dry cold atmosphere and it was done!. Another 3 batches ended up being made before we came home, the last having to be finished when at home where the cat took rather too much interest. It's been quite a hit with everyone who's tried it mind you a bit of advertising helps.
You southern guys have a great untapped resource there literally just a hop away.
