No idea on pricing but I saw a 70 series cruiser the other day that they had built a deck/canopy for and it looked very nice!
There are manufacturers everywhere over here. Very common for the touring/overlanding set. I’d think some must ship to nz. Pricing often includes a new custom tray that fits/matches up to the canopy and jacks the price up. Also quite a few cheaper aluminium canopies manufactured in China that you add your own internals too. These are 5-6k

Don't be afraid to look into the second hand market, a lot of good quality gear in good condition but it just needs to be found which takes internet research and phone time.
Shelyron do some very nice stuff. We've had quite a few done for customers.
Ex work colleague imported his from Oz for around half the price of anything manufactured locally

Central Custom Engineering in Alexandra do excellent work from their well-equipped workshop, standard production items as well as custom-built units. I get a range of parts made on their CNC water jet unit, good quality and reasonable prices.

30k, jesus. Custom trays are mint if they are setup well and you only do with them what they are intended to do but they can become limiting aswell. I like the ability with a simple canopy to just load it up with anything and everything. One day maybe i’m picking up a washing machine or a random large item that wouldn’t fit in the folds of a custom tray. Every Christmas holiday I get two motorbikes in the back and puzzle piece a lot of stuff in for the family haul that I simply couldn’t do with a custom tray. Cost me 3k instead of 30k too… wowee
