After tyres for a 2012 Ranger, will a 265 75 R16 stick out too much? less options for tyres in the 265 70 R16 option.

Both those sizes are the same width so if on the same rims will "stick out" the same. The 265 75 will be taller than the 70.
"Stick out" will be determined by the offset of your rims. If you have factory wheels and replacing the the tyres to a bigger size ie 245 70 r16 to 265 75 r16, then you should be fine but hope under the truck and see if you have plenty of clearance around the wheel as it sits
I run 265 75 16" on my 2014 ranger no prob. More offset than factory, sorry cant remember exact figure but sit nice and flush with guard.
Just put on Razr ATs which on road so far are great.

I love the advert for razr tyres from Maxxis, probably cause the guy is using a Dpt ;-)
Tyre sizing works like this
265= 265mm width
75= Aspect ratio, which means the sidewall height is 75% of the width
R16= Rim size 16"
The tyre will not be any wider, only taller. The only way you'll get it to stick out more is by changing width drastically, or changing wheels to a different offset.
The increase in height may cause scrubbing at full lock on your mudflaps, but you can trim them with a sharp craft knife as it wont be much
As for what to buy, buy once cry once and get the Maxxis Razr MT772 tyre, excellent mud terrain that is well behaved on road
