Got a jet boat in the shed with a 3.8 buick, good power and simple/reliable.
I would suggest choosing a motor renound for high mileage/reliability. Unfortunately this generally means old inefficient heavy slugs.
Marine engines have a pretty hard life compared to the same engine mounted in a vehicle,there is no coasting or downhill just constant load.
Also not usually the option to walk home.....
I am not up with the play on modern engines enough to recommend anything but will say make sure it is well powered,always better economy/safety to have power in reserve.

Some vehicles really lend themselves to adding a different motor. Put a 1uzfe in an e30 once, man BMW made it easy in a lot of ways. Engine loom is completely separate, and battery lives in boot, so could push it in and out of shop into rain and still wind the windows up. Speedo was driven off the rear end, so no pissing around there. Only major issue was clearing the brake master and booster, which we solved with a Renault Cleo booster (same stud pattern) and a D21 Isuzu master (right everything else, and 1" vs 7/8"). Made all the headers and twin 2 1/4" exhaust from scratch. Went like the proverbial raped ape. Wasn't mine (boss's) but was insured as the courtesy car so several customers got home with a sweat on (no we didn't pick housewives for this treatment)

A short, heavy, fat fibreglass 17'/5.3m Vistacraft from about '71-'73 with a Volvo Penta stern leg. Was used commercially out of the sounds. Original B30 170HP engine was overhauled about 5 hours ago, but has been sitting a few years. I'm picking this should be run with lead substitute additive.
Highest priority is reliability. Will always be used with a 5HP aux. Not sure on budget, want to do most of the work myself.

A dunnydoor V6 would be a good powerplant. Can pick them up cheap.
Lots of marine bits available as jetboaters love them (or used to).
Plenty of options to use either carbs (like speedway guys run) or full EFI with std ecu and simple wiring harnesses available as well.
