A pity about the ceramic steels, they are bloody good for sharpening any blade
10 inches long maybe a little over kill for the mercator pouch

I use a Kershaw Skyline as a backup folding knife, affordable, holds a great edge, I have skinned and butchered pigs and deer with it.

EKA Outdoor Edge swing blade - best I've ever used. Made is Sweden, good quality steel. Keeps its edge. The swing out design works great.

My latest Mercator is great. The lock is very positive and it doesn't have the usual sideways wobble in the blade.
I like the cheap fixed blade option, Bahco or mora. Sharp and sturdy, no heartbreak if you lose it. In saying that I also like the Kershaw Bear hunter and antelope hunter.

If you like folders, try CRKT. Their stainless folders have a beefy frame lock and perform well. I have a few, and my favorite is the CRKT Get Sh*t Done

I normally shop at Blade master in Auckland for knives.
The mercator isn't stainless but it lives on my belt with my PLB permanently. Best edge and nice narrow blade for doing the arsehole on an animal, or the inner fillets from the outside of the ribs.
Only Opinel INOX is stainless, but I don't like how they stiffen up or go loose depending on the humidity.

+1 on Kershaw. I used an oso sweet as an edc for must be 8 years, still going strong. Never butchered or skinned with it but it got used hard.
thanks for all the advice. I bought an EKA Swede 10. THe retail therapy box has been ticked for the month.
For folders I am a fan of Opinel, although I tend to break the tips off somehow, and the Svord peasant because of its niftyness, although the handle needs a lot of work to make it comfortable and the blade does need som reprofiling to be good - but I am hardly ever satisfied with anything straight out of the box so could just be me.
I personally prefer a small fixed blade (or a big fixed blade and bugger the weight) to a folder though, just seems like less to go wrong, although I usually pack a leatherman when I go bush - can do a lot with one of those little nuggets. And a fixed blade.
