Thread: Gut hook knives?

I now go the other way brisket up.
Find it works for me.
Noticed that is the way guys I know do their pigs.
Dairy farmers that can do pigs without a problem but haven't a clue on sheep.
Do not use fingers just "delicate" with the knife.
Funny how you can change from what the old man taught us 40+ years ago.
