scary sharp - made in Hawera are very good but expensive for a fathers day present - but will last for years and you will have a lot of mates wanting to use it - why not a decent oil stone -if one of you were good with wood make a nice box for it - I use an oil stone every now and then on my knives and just touch up with a diamond lap - or just a diamond lap a nice size one are around $50-60 -mind you if you were filthy rich a proper Swedish electric sharpening system with wet wheel and leather polishing wheel - yeah hah real nice - warning there is a lot of gimicky ones out there especially those cheap elertric ones with a V slot
depends if the old fella is any good with an oil stone or not....
one of the diamond/oval steels is a good idea,you can spend serious money on a scarey sharp of warthog system...or smaller amount on lanski
probably the simplist to use is the ceramic rods in wooden holder from lanski
Ive got both of the lanski systems but since putting oil stone in wooden holder in the vice..they havent been used.
the V you drag through are simply diabolical when get worn.....I sharpen knives for a few mates and when they have used those plurry things....it really shows.
Scary sharp is bloody good.

I have the Lanski. Seems to be ok. Although I have noticed one or two for sale on here lately which maybe dosn't support my opinion lol.
I'm pretty happy with mine as it is MD. But I might try that method too.:thumbsup:
My experience with the following.
Lansky is ok on smaller knives, not so good on larger knives
Scary sharp is good on larger knives, straighter the better. Gets fiddly with smaller blades.
Tormek is hard on your wallet. Does most other edged tools in addition to knives, although requires purchasing extra jigs. A real legacy tool though.
Ha ha I use this and love it, have used it for around 5 years on 2 different knives and it still works fine however it's not to say your experience is wrong just I am getting good results with mine and I hope it continues, very quick and easy to use.

when its worn..throw it away and buy new one.....whiltshire made a straight edged black handled,kitchen knife in orange and white holder with the V bit built in....it eventually created a 45 degree type edge hopeless for anything but lettuce .

Ruixin has a bunch of different options for what different grit stones you want. Can find them on aliexpress very cheap and it will do the job beautifully.
Also.
Being electric, the Tormek is tricky on knives where the edge and bolster meet at the heel; ie no choil.
It’s can be a trade off between grinding into the bolster or not grinding the edge to the bolster. Especially on abused over steeled knives owned by colleagues.
Chisels become surgical.

Irrespective of the sharpener you get - buy yourself a good quality steel. Not the "NZ Rabbiter" one that is rougher than a rat-tailed file , you need the one they use in the meatworks that is totally smooth with no ridges on it at all.
And learn how to use it properly.
What about warthog knife sharpeners? H&F sell them and also they are on trademe.. Anyone tried them?
I have fucked around with a lot of systems and by far the best is the aussie invented and made easy-sharp.
I got onto them when working in a muelsing gang for a couple of seasons in WA.
The flip over system is best one I have seen and used as you just pull it out turn it over and it's ready to do the other side.

I got one of the older scary sharp systems, I rate it higher than the newer one. Can set it up to use the thinner stones like the Lansky which can make it easier on smaller knives.
It's a lot quicker than the Lansky system and to be fair I don't find any issue with smaller knives.

As far as the steel, a piece of 10mm round bar with a smooth rust free surface works as good as anything. All you want to do it roll the wire edge straight, cut the new edge with a stone or an abrasive and hone it with the steel and then a hone...
I just run the Mercator down the Sako barrel a couple of times and carry on

I decided a while ago to invest in a high quality fixed blade. I was using the replaceable blade models, but didn't feel good about throwing away blades and they were so sharp, they felt dangerous. I'm much happy with the fixed blade, feel like I can put much more torque into the tool and work. Because of this, I invested in a Work Sharp Field Sharpener. Despite being a gram weiny - this is 170g, and relatively compact. But, it gives me a simple guided sharpening process "on the hoof" coarse diamond + fine diamond + ceramic + leather finish. Been brilliant for in field and at home (for those that have "those" that like cutting cake on plates). It's basically taught me angles and the process through repetition. Can't recommend it enough, along with an investment in quality knife steel + and regular sharpening. I got mine through some "dealer" on Trademe locally.

Lansky system works well to start an edge.
Slighty off topic.......if anyone local to here,or going past needs knives sharpened...flick me a PM and I will sort them for you...that includes the long neglected knives from the kitchen too,good excuse to meet fellow forumites,shift worker with varying days off so will fit it in when and where I can. run out of knives to sharpen around here,even did all the scissors this morning LOL
