Some mates and I just went through a similar process over the last couple of months leading up to a hunt in Fiordland.
Easy to get carried away.
I've been looking at the same pack, also the Nomad is under consideration. Let us know how it goes in the field.

How do you like the quilt?
My gear:
macpac's
50L - 2.2KG,
60L -2.5kg,
80L - 2.5KG depending on length of hunt.
Mountain Hardware -9 degree C bag - 1040g
Terra Nova solar Photon 2 tent - 980g
Therma-rest neoAir - 430g
Cooker is a cheap gas one - 70g with MytiMug Ti - 110g
have also used supercat and alcohol in the past (Aluminium cat food can with holes) good for a weekend.
Above the bush line:
North face down jacket - 450g (Has a hood.)
North face gortex jacket and pants. Forget the weight, but reasonable. Very similar to the sitka in cut.
Also looked at the sitka dewpoint, but as you say the cut is short, if only they added a bit more length it would be great when you are wearing shorts.
I have no experience with the Sitka jacket. In the end I saw no advantage over my North Face, so decided to save my dollars.

Given that you don't want camo, maybe consider regular hard shell? Patagonia M10 looks ok and is on sale. I expect it will be a similar cut to the Sitka, but very light and less $$
