    Mincers and sausage makers?

I've got the hand operated versions of both of these. They get the job done, but are painfully slow.

The mincer is a real pain to operate, as I spend more time unblocking it and taking it apart to unwrap meat gunk from the auger and plate than I do winding the handle. I've put up with it for the last 20 years as I only do a batch every now and then.

However I've been offered a cow. Yes...an entire cow! The deal is I can have half if I turn it into mince. The guy said it could be a regular deal between us if I'm keen. Sooooo....I'm seriously thinking of buying a more commercial style mincer.

    Thoughts? Experiences? Ideas?

my partner brought me a Kenwood mincer, called pro excel 2000, as in 2000 watts. it can process 3 kg of meat per minute.

I rate it, do all my own sausages too. well worth the money.

Add about 20% pork fat to the venison sausage mix

I like to keep the reciepes simple, rosemary or mixed herbs and onions go well with venison.

Theres hundreds of venison reciepes on Google.

Also look up Scott Rea on you tube...... His reciepes are great
