For hunting I would say a quality poncho, keeps you dry, your pack dry and your rifle out of the elements...can use it to build a fly or groundsheet.
One of those clear plastic toss away one's are good to have in your daybag for when caught out in the weather...you may look a dork...but a dry dork.
Which is worse, ignorance or apathy...I don't know and don't care.

For staring dry I like my British milsurp Gortex smock. Quite heavy and a little bulky but it works extremely well. Topped it off with matching trou for $200 total.

I use one of the Goretex tops too, I'm on my second one now after the first cost me bugger all compared to some of my other hunting waterproofs and lasted me a couple of years of abuse.
They aren't lined so weigh very little, the hood is very big as it's designed to fit over a helmet and they have kept me dry!
For the money, there isn't anything else that compares and being lightweight and compact, they're easy to stick in the bottom of your pack on those days where they just might be needed.

I have a bunch of there gear, Its very very good stuff so far with limited testing. Went out yesterday in sideways rain and lots of wind, Open (ish) walking, creeks and sitting on a slip for quite a while and i stayed dry.
I had my chugach nx but used it as a gound mat and it worked well.
Was wearing there attack pants and Guide jacket. Was dry as and very warm.
I've got a Ridgeline Roar 2. I used it this Easter, it well and truly raining and it did well to keep me dry and blocked the wind well. It was a tad damp on the inside but I think that was mainly sweat. The microflece sweater I had underneath was still nicely dry and I wore them both the next day, whilst the coat was a tad damp it wasn't waterloddeg and kept me warm and dry again. I was very impressed, due to costing me $200 from 1-day. Heaps of good pockets and is quiet too.
I've got the Roar 2 pants as well. They kept me warm and dry, but due to me usually only ever wearing shorts they were sweaty as, but kept the water out and kept me warm.
Got them off trademe second hand so I'm pretty stoked.
