Here are my NZ Made Duel knives - a traditional skinner and a boning knife. Steel is nothing special and although they don't hold their edges like 3V, they do strop up easily. The boning kife is the best shape that I have ever used for boning out and is even a fair skinner when needed.

Yup I had a smaller skinner, didn't like it so sold it, wouldn't hold an edge. Shame

My latest is a Bark River Phoenix 3 in good old 1095 steel. Its easy to keep a razor edge on it with a rabbiters' steel, but will hold its edge for at least one gut and cut up job without touching it.
