It is the thermal insulation of the outer pot which achieves the slow cook so if that insulation is not up to scratch it will not cook properly. I cook things like lamb or venison neck chops for around 8 hours, they end up falling apart tender. The big key to getting a good result is to ensure the food is properly heated through before putting the inner pot inside the outer pot. there was a brand being sold in NZ called the "Quarter Acre Pot" it was excellent.
