As above, what the best trap and bait combo to catch them. Something is digging tunnels under the wife's aviary. Could be a rat but it's not touching any of the bait in the bait stations that usually work.

Using a few quail eggs in a DoC 150 trap. Plenty of snap in the trap to take Rats, Stoats, Polecats, hedgehogs.
Put a chicken egg in the other trap, and it is only about 1/10th as visited.
Farmlands has them already assembled in boxes.
Doc 150, is that the one in the wooden staple/nail box?

You can also use a tracking tunnel with a hole cut in the side and a T-rex trap stuck in through the side

There are loads of pictures of trap set ups doing the job on both stoat and weasels.
PCR (pest control research) do a copy of the DOC 200 its pretty cheap @ $22 - Build your own box!
I got a weasel the other day in a $6 victor rat trap in a home built box, so don't need to spend a fortune.
So far, fresh eggs and fresh rabbit meat have been the best baits for me on stoats and weasels

Modified victor or one of the doc 150 200. Shoot a rabbit and press it's guts till piss comes out and bottle it and spray the trap with it
