There's not a lot there really the brests are best. If your dealing with 50odd birds the last thing you want to be doing is plucking and gutting.
I leave them to hang for one night the just peel back the skin and Brest them out....same with pigeon, partridge. Only ducks get the special treatment of a pluck, gut and singe off with the heat gun, my good wive hasten awesome Peking duck recipe![]()
