mikee that dose look really good I'll have to try that one. Dose not look dry!
I never roast pheasants! Always quike fry the brests to seal the juices in then a pre heated oven for 7 minutes, man do they come out tasty. I then make up a salsa and heat up some burritos slice the phesant and burrito phesant. It's quick and easy to do.
Also rather healthy, you can do this with most game birds:thumbsup:

There's not a lot there really the brests are best. If your dealing with 50odd birds the last thing you want to be doing is plucking and gutting.
I leave them to hang for one night the just peel back the skin and Brest them out....same with pigeon, partridge. Only ducks get the special treatment of a pluck, gut and singe off with the heat gun, my good wive hasten awesome Peking duck recipe :D
