My understanding is the entire Waitaki riverbed is crown land. It is a braided river with lots of shallow braided streams. there are a large number of farm gated with Fish and Game signs that indicate public access to the river. If you want to go to a particular spot and cant find a gate just go and ask the cockie I've never been refused access by a farmer in that area yet and have hunted and fished it for over fifty years. the farmers there are a great bunch of people.

The further away from christchurch you get the friendlier the farmers are.

No there are very friendly farmers in the NI too.
Two years ago I asked a landowner in Minganui area if I could hunt on his land. He was most hospitable and we stayed there for three days. Had such a great time I didn't want to leave.
