    Pukeko recipes?

    Going for a cull of pukeko mates farm on Saturday to help out with duckling survival once they arrive,we usually go pretty good on the swamp hens ,thinking I might grab the breast meat from them but have heard they are pretty crap eating wise but hate wasting meat and trying to instil ethics in my son of eating what you shoot,any ideas for cooking them?cheers

    I reckon the pukeko breast is as good as if not better than duck. I just fry mine like a steak or stir-fry with asian style veges. Not as gamey as duck. The legs I feed to the cat - there's sinew in them that challenges a sharp knife!

    I've got a Fish and Game NZ cookbook which talks about mincing the breasts and using the meat for burger patties. I imagine the same can be done for meatballs whether it be in an pasta sauce or over rice with satay sauce (personal favourite). Happy to share the recipe via DM, not sure about the legalities of uploading photos of a book... ?

    Get yourself some steak spice and fry them in butter. They don’t deserve the reputation they have but I wouldn’t rate them higher than other game birds.

    Any random combination of herbs, spices and vegetables, provided the meat is slow cooked over 4-6 hours. Always an easy win with the slow cooker, it makes any meat into a tasty stew.
