    Turkey processing

    Had an opportunity to hunt Turkey on a generous farmers land and managed to get my allotted 2, gutted them when I got back last night,1 hour after dispatching them and now have skinned and processed them. One has a more obvious smell to it, not rotten eggs or rancid like, but an obvious aroma...

    Question is, what should I be looking for signs of meat spoilage? It's is the first time harvesting Turkey and I'd prefer not to poison the family.....

    had a look with google fu but not overly helpful.....any info from people with knowledge/experience appreciated

    Maybe ruptured the gut n tainted the meat..?
    Not talking about the grass bag.

    Possibly some are still eating crickets, a overhang from that..? Thought that would have finished by now though...

    As above, if they have been eating crickets then they will smell and taste rancid. Give it a month or two and it'll taste like a supermarket bird. Not those particular birds! I mean go get some more during winter.

    Heaps of crickets still around down here, will be July before I'd contemplate taking them for the table.
