Dont know about down there but you should be able to get paddle crabs year round? In the wash on a surf beach would be my choice
Worth a crack. Raw chicken frames ,necks or liver works best . (100 asians fishing off the brighton pier can't be all wrong )
Rule 7: Avoid alcohol and drugs when handling firearms
Use an old bike rim and zip tie some mesh over it. Put it behind the breakers with bait tied on and buoyed to surface. Paddle crabs get tangled in mesh. If eating said crabs, chuck into salted boiling water for 5 mins max, then into cold (chilled) H2O to stop further cooking. Rip back off, wash out guts and salivate as you slop your way though them. Crunch...crunch.. (Dammit; 'nuther filling gone!).

Well at least it will catch Koura in a lake etc. if its no good at anything else.
VC growing up every Summer the whole family went to your neck of the woods and there were tons of Paddler crabs that would grab your toes at low tide round at Rabbit Island - along that coast would be where I'd take a look (probably all changed) since I was a cowboy!! Is the nudist colony still there? Plenty of bird watchers looking across the Estuary but I think their suits needed ironing....
Yea the area was infested with them late 80s and 90s and probably the 2000s too but there were almost no snapper or rig either then.
With their recovery(snapper gurnard rig) I expect crab numbers to not be what they were when the whole ecosystem was out of whack but am sure there will still be some around.

Well I got 3 lol.
First set in about 6m with cuda fillet for bait. 30 min later bait was infested with sea lice and no crab.....into 4m or the low tide line as it was high tide. One small one and more lice in 15 min.
Into 2.5m and the inter tidal zone and added some salted mackerel bait an got 2 and no more lice but that may have been due to it being nearly midday.
