    We Panko crumb all our fish - trout included , flour ,egg , Panko crumbs - fry them in a bit of oil and some butter to brown off the crumbs.
    In my experience river trout outside of Taupo or the Rotorua lakes seem to be the mud fish most people associate trout with, but if you get a Kura cruncher from lake Taupo or Rotoiti, etc they are just like salmon.

    Best thing for river trout is either use them for snapper bait or fillet them and smoke em... Then after smoking flake the trout into some cream cheese with a squeeze of lemon mix it up hard until it's smooth and you've got a nice pate' , spread it on crackers or on vogels toast. Try and cure the fillets for a day and make sure the fillets are dry before you smoke them to get the best smoking results.
