    First rig of the season

    Went out to catch some crab for this summers kontikiing and thought I'd be cheeky and throw the first crab of the night on a hook. Not too long later wammo first fish of the season landed.

    Key thing with rig is to immediately "trunk" them- whack their head, tail and fins off so they bleed out quickly. The ammonia in their blood taints the flesh otherwise. I worked on commercial boats as a kid and processed bloody thousands of them. Final thing was running the deck hose through their spines to fully clear the blood.

    Filleting them is a bit weird and it takes a bit of figuring out how to avoid the cartilage.

    I smack em on the head then cut the fillets off. Hold its tail and stand on its head and run your sharp knife down the back bone, they peel off nice and clean.

    Cooking is up to you, I like to cut them into bite size chunks then coat in what ever you feel like, breadcrumbs or coat n cook (just throw it in a bag and toss don't use egg) then shallow fry. Don't over do it or it will go dry.

    You can use egg if you want I just throw the whole batch in the bag with the coating, the moisture from the fish makes it stick just fine.

    rig have no teeth just hard gums. also the spots and bronzy colour. they also generally don't touch baits normal dogfish will take. crabs/crayfish/prawns all good for rig.
