Give those fish you usually ignore a try.

    Interesting read.
I'm picking most of us are already smoking frames\wings and eating heads etc.

Snapper are in such abundance up here, it's hard to get away from them. Long may that continue. We do enjoy kingfish with careful preparation - bleeding, ice, vac-packing etc. Trevally is good fresh, and everyone knows that JD are great eaters.

As for the weird and wonderful, octopus and blue/pacific/slimy mackerel are highly valued in our kitchen. None of our snapper heads/frames go to waste. After taking fillets off, I gut/gill the fish and freeze them individually. I bring them in to work when I have collected a few where they are gratefully received.

Just because you prepped it doesn't mean you have to eat any of it.

If I keep it I eat it or give it to someone that will.
I do take skins guts and frames(clean) frozen back to sea to dump tho....no point putting it in landfill.

Made a point of trying a leatherjacket recently. Easy to gut (just tear its head off and the gutz comes with it) but fiddly getting the fillets off and bugger all there. Having said that, it tasted fine and had a firm texture.
