    Don't use the guy down hawkes bay.
    Some off the guys have instructions on field care on there web page @mawzer308 Just read this off a guys page
    "Once the fish has been caught, pick the best side. Place best side up on flat board (if possible), glad wrap (not too tight) and put into freezer.

    Take as many photos as possible"
