Nice build! I am a big fan of the 7 PRC and suspect you are going to harvest many animals with this set up.

If required, you may find some improvement in your groups by adding some weight back into the system. Whilst some of the variation in shot to shot impact may be due to the new barrel still "settling down", I suspect a significant portion of your variation could be related to the weight of the overall system impacting precision. I make this statement based on the findings from Mitch Fitzpatrick, Bryan Litz and some others who have been working on a equation called "theory of precision" where they have identified weight of the rifle being a key contributing factor to the precision potential of a rifle. An easy way to assess whether it is the weight of the rifle is impacting your precision potential is by attaching weight to your stock. I have done this in the past with a 300NM set up we were testing and the groups (5 x shot groups) approx. reduced from 0.9 MOA average to 0.65 MOA average using 230gr Bergers.

Also, I suspect you may have the new Hornady 7mm PRC factory ammo. Hornady have recently have stated their new 175gr 7mm PRC Precision Hunter ammo is going slower than their original batches. I may regret posting this online but if you get a chance, ring around and ask for Hornady batch #80712 in 175gr ELD-X. I currently have that batch of factory ammo exiting my 24" 7mm PRC barrel at 2985 fps @ 8 degrees Celsius. For context, this barrel needs a deep clean, after which I expect the average MV to drop by approx 50fps before migrating back up towards the 3000fps mark.
