    bacon options Manawatu

    I have a 2 year old boar needing to go in the freezer. I'm assuming mostly into bacon just from general comments people make. What, if any other cuts can you get? Hams? Roasts?

    The problem I have is that none of my family like smoked bacon, we have tried two different lots from commercial butchers but it's too strong for our liking.

    Is there any butcher in the Manawatu that can handle non smoking curing?

    I use Dale Old for all my butchery of pigs and beef, doing sheep myself.

    Or is there a simple way to do it myself for that volume of meat?

    Had a butcher come up to the TVDA gave a demo on how to cut up a venison & get the best out of it.
    Was very interesting to watch him work at his stock & trade. He also brought up some of his product for supper ,the venison sausage's where awesome ,as was all his bits n pieces that him & his lady produce at their shop.

    Asked Shaun if he would do my Wild Pork legs into ham ,the result

    Got too much for me in freezer so a bit of cooking now.Don't know what he smokes with but it smells absolutely lovely.

    If you want meat done well get some one to do it that knows what they doing .Shaun would be up there with the best in NZ I think .
