BBQ SAUCE
3kg Tomatos fresh or frozen-remove stems or 8*400gm tins
0.5 kg Onions-diced.
50gm Plain salt.
3T minced chilli. To taste.
4T instant coffee.
0.6L Vinegar-any type (brown is nice for BBQ sauce).
0.5kg Apples, chop and remove cores. (or omit & double the sugar)
50-100gm Pickling spice (in a muslin bag).
0.5kg Sugar (use brown for darker/richer sauce).
Boil Tomatos, apples, onions, salt, & vinegar until soft.
Blend or moulie & strain to remove lumps & skins.
A stick blender works well in the pot and picks up any stray skins.
Add sugar & spice, boil until as thick as desired.
Remove spice bag.
Bottle when cool.
