I fully rate butchers block in Wanaka. We get a dozen red deer processed per year with them and their salami and beer sticks are top knotch. Both are smoked and have a few different flavors to them.
Arrowtown butchery used to be good last used about 6 yrs ago though
We pay $10 a kilo in Geraldine to get venison turned into gf sausages bloody nice indeed.cumberland type is the ducks nuts.geraldine butchery.they do awesome hams too
Riversdale butchers are pretty top notch too

Links is expensive tho ay! I regularly buy stuff from him. They wouldn't sort out a pig for me when I asked them to though, from memory they said they don't do homekill stuff. Might have just been that particular job they didn't want to do though.
I've heard a recent glowing review for outram butchery, from a farmer I buy milk from. The same farmer only had bad things to say about Tiny's Milton Butchery. He said he'd got two cows done at each butcher recently and the outram butcher was heaps better apparently.
Another vote for Blue Mountain Butchery though - I buy salami's from them at the otago farmers market. Fantastic stuff.
Deep creek deli in Dunedin was my go to after trying most if the others. Wasn't impressed with outram butchery.
I like spicy euro style sausages that isn't that popular with many kiwi's tho.
Outram Butcher used to do very good sausages
Matanaka meats in cherry farm by karitane. The best salami in the Dunedin area IMO and their sausages patties and savaloy are awesome to kids love em.
Outram does a good basic job for cutting up cattle beasts and mutton. good packaging, mutton sausages good, beef not so much. Have had a few deer done at the butchers block Wanaka last couple years which do a great job for small goods with lots of flavors for snags/patties and great salamis. Been meaning to try their biersticks
I might try Bazas Butcher next time. I met the owner if it the other day, it's a new abattoir and butcher at the top of dalziel rd, specializing in home kill and wild game processing. He's got yards there etc for live animal drop off. Sounds like he's doing it properly, got some expensive gear etc. might be a good option.

I ended up getting Salami and beer sticks at Butchers Block Wanaka out of convenience.
Not cheap but really happy with the product.
Will try somewhere different for the next round of sausages
took 20kgs of venison into butchers in Geraldine on Monday....picked up 37 kgs today,half savaloys half sausages...actually more sausages the ytaste great...and bill of slightly under $190 is more than plurry great

You would be easier to drop it off at thee butchery in Cromwell Mall, that's nice and close, well priced and they are easy to work with.
I just have a deer put into salami the other weeks after a recommendation of a mate. What turned out to be 196 bucks for the whole animal with them supplying everything other than the deer meat. that was about 16 foot long logs.
